One Pot Chinese Style Beef with Braised Bok Choy and Basmati Rice

Method
1. Deseed the red pepper and red chilli, and cut both into thin strips. Peel the ginger and slice it finely.2. in a mixing bowl, mix together the red pepper, red chilli, ginger, beef strips and chinese five spice powder.
3. Add a tablespoon of vegetable oil to a large frying pan or wok over a high heat, when its hot add the beef mixture and fry it quickly to seal the meat. After a minute, add the rice and stir well.
4. Add 400ml water and bring to the boil. When the water starts to boil reduce the heat, cover the pan and leave it to simmer until the water has been absorbed, roughly 10 minutes.
5.Destalk, wash and roughly shred the spring onions and pak choi. Add these to the beef mixture, along with the soy sauce.
Mix everything together and simmer for 2-3 minutes.
6. Divide equally between two plates to serve. No need for garnish with this colourful dish- lets keep it simple
